Why might you remove a roast from the oven a few minutes before it's done?

A roast is removed before it is at cooked temperature because typically it will continue to cook and the temperature will continue to rise after being removed from the oven. You will also want the roast to "rest" before carving because the juices will settle and the meat will be more appetizing when served.

Meat, and all food for that matter, continues to cook after it has been taken from the oven. Meat must be allowed to rest, and during that time, will continue to cook.

To avoid drying out the meat or over cooling. A roast will continue to cook outside of the oven for a few minutes because of the residual heat.
