Well, that depends on how religious the other person is! Easter isn't necessarily a religious holiday. For some it's a day of candy and egg hunting. A simple "Happy Easter!" should be good enough to cover religious and non-religious alike.

You don't have to observe or believe in Easter in order to wish those who do celebrate it a happy one. The appropriate greeting is simply, "Happy Easter."
