Worm cheese is Pecorino cheese infested with live insect larvae. This cheese is known as Casu marzu in Sardinia, Italy. Casu marzu means 'rotten cheese' in Sardinian. Larvae of the cheese fly Piophila casei, are introduced to the cheese to promote an advanced level of fermentation. It breaks down the cheeses fats and texture of the cheese becomes very soft.
