Cheeses manufactured from unpasteurized milk are the most ikely to contain pathogens. The most common cause of illness from eating cheese is the bacteria salmonella. Listeria, associated most often with soft cheese, is rarer but particularly dangerous to pregnant women. Any woman who is pregnant should avoid soft cheeses.

Cheese should be stored in the refrigerator to prevent it from molding or drying out. If it is stored in a warm place it will spoil like any other product containing milk.

Cheese should not be left out of the refrigerator for more than 4 hours. Soft cheeses are more at risk of causing illness than hard cheeses.
