There are so many to choose from, there's Filet Mignon, round, strip, cube, flank, flap, sir tip, chuck, Chateaubriand, sirloin, skirt, etc. They are the different parts of the cow.

The least tender are the rib-eye but they are the most flavorable. The next section is the loin which contains the T bone, top loin steak,(sirloin, top sirloin), porterhose (which is where the strip steak comes from). The tenderloin contains chautebriand, filet mignon and touranedoes. There are the chuck, round and flanf steaks which are tougher cuts.
