Sherbet is a frozen ice cream like dessert, made from fruit juice mixed with a milk or cream. Sorbet is a frozen dessert also made from fruit juice but with water and sugar rather than a milk or cream. Sorbet is compared to fruit pops, icy and fruity. Sherbet is more like an ice cream substance, creamy and fruity.

Sherbet is made with fruit juice plus milk, sugar and eggs so it is thicker and higher in calories compared to sorbet which is fruit juice that is only slightly frozen. Sorbet is used to cleanse the palate between courses whereas sherbet is often served mainly for dessert or for people with upset stomachs.
