This is a matter of preference and there are a lot of people that prefer all alcohol be chilled. In a colder state, the bite or taste of the alcohol is less noticeable.
Well a lot of the reason is it served cold is to make it smoother. This is mainly due to the fact that it is less aromatic when cold. So you don't get as much of the raw alcohol aroma while drinking.
