Sidework encompasses all the chores that support the wait staff in their efforts to provide good service. Making sure the coffee is set up, the ice is full, salts/peppers/condiments are filled, necessaries stocked and the areas are clean and organized. This makes it easier for everyone to work.

Sidework involves preparation that makes good customer service possible. It is very frustrating for a customer to realize after they pick up their take out order that they have no fork or napkin. Or if you are in a restaurant, you shouldn't have to beg for ketchup for your fries.
