Meat is hung to drain out the blood from the meat, to expose it to air causing it to dry, to help the meat cure and develop its flavor. Also the enzymes present in the meat break down the fat and hence tenderize the meat and help in adding flavor.

Well in the case of cured meats it is so that the meat will keep longer. The dry surface created by the air circulating around is a less hospitable place for bacteria and germs to thrive.

Generally, people hang meat to let the blood soak out of the animal and dry it up. By hanging it upside down, the meat dries so it doesn't sit in it's own blood.
