Why do we need three prong plugs?

The prongs carry hot, neutral, and ground. Hot provides current. Neutral provides the return path. Ground is a safety to prevent a metal case from getting electrified and shocking you.

The third prong is a ground. Should a fault occur in a device, the ground protects it, as well as keeps it from bursting into flames or shocking the user.
