Your fish could have died from a contaminate in the added water or from shock due to a temperature difference between the new water and the water in the tank. Always make sure the water is clean by testing it with a test kit for impurities before adding any water. You can use a water conditioner as well.

If you changed all of the water at once you destroyed all of the bacteria that break down waste. If you used cleaning agents they may have harmed fish.

If you replaced the water with clean tap water, your fish may have died due to the chlorine levels. Always use something to neutralize the chlorine in new water.

You may have changed too much water causing a spike in ammonia or nitrites. You should only change 25% of the water a week, under normal circumstances. Always use dechlorinator!
