What organic roots are edible?

I am trying to eat everything organic and as "from the earth" as I can get.

There are literally hundreds of organic roots out there. Many of them are edible, but a few are not and can even be deadly. It is best to consult a natural health practitioner to ask about specific roots.

Some organic roots that are edible are ginger, potatoes, carrots, onions, sweet potatoes, yams, beets, chicory roots, taro, cassava, garlic, parsnip, raddish, burdock root, tapioca, turnip, dandelion, horseradish, celery root, Jerusalem artichoke, and salsify.

There is a great variety of edible organic roots like sweet potatoes, yams and regular potatoes. Carrots, Onions, Garlic, Celery roots, Beets, Parsnips, Ginger and Horseradish, Or try some Taro or Dandelion and those are just to name some.

Lets not forget about potatoes high in vitamins, minerals and fiber. Carrots is all so a edible root, lots of vitamin C and carotene, am thinking carrot cake!, yum yum
