What is the secret to cooking pizza?

I like it crisp but not burned.

The biggest secret is olive oil. If your put a thin coating on your pan and on the bottom of your dough, the crust comes out crisp, but not burnt. Also, make sure to use a real pizza pan, and not a cookies sheet.

First use a pizza pan, not a cookie sheet. I pizza pan is thinner and will cook better. Make sure that you use pizza dough, or a pizza dough recipe.

The best is to cook it in a wood-burning oven. The italian pizza is thin, so spread the dough and cook it in the higher place of the oven.

To avoid a soggy crust, start by pouring a little oil onto your pan before you fit the dough into it. Rub oil on top of the dough as well.

The easy answer is too get the oven hot before you start, but if you want to make a habit of eating pizza you really need to buy an oven stone. It stays hot when you open the door, retaining enough heat to give you a crispy base and cook the topping without burning, unless you leave it too long!
