The recommended internal temperature that beef roast should be cooked to is 160 degrees F. It is safe to freeze beef but it is best used within nine to twelve months.

Beef roast safety is pretty much the same as when handling any other kind of meat. Make sure it's refrigerated until time for you to cook it. Be sure all surfaces it rests on are cleaned before and after. Do not keep any kind of meat beyond the recommended sell date unless it's frozen. Even then only three months after.

Well as with any cooked meat it should be cooked to the safe temperature suggested by the FDA. After cooking the meat should be kept at a safe temperature.
