When cooking muffins you should carefully measure dry ingredients, and then wet ingredients separatley. After mixing all of your wet mixing ingredients, then incorporate the dry ingredients in small amounts.

Muffins should be scooped out into baking cups with an ice cream scoop. The baking cups should be about three-fourths full.
