white rice has been bleached. all rice is originally brown. the bleaching process removes a lot of the nutrients out of the rice so it is not as nutrient rich for a person to eat as the brown rice. most dieticians recommend the brown rice rather than the white because of this.

All rice starts as brown rice. Brown rice has not had the brown colored bran removed from the outside. Since white rice is not weighed down by this bran, it cooks lighter and fluffier. White rice also cooks faster than brown rice. White rice is not a nutritious as brown rice.

The kernels of brown rice are covered with the bran. Because of this, brown rice takes longer to cook. It has more flavor and is more nutritious than white rice. However, white rice can be enriched with nutrients and, because it does not have the bran cover, it is more tender.
