What is the best way to prevent knots and mats in my cat's hair?

Constant grooming is always the best answer. Although if its a constant problem you might trim any amount of hair from it. Check the groomers as well. Cats have products for a bad hair day too. Products, brushing and trimming can be disguised as petting if you do it occasionally here and there. 5 minutes with the brush or scissors.

Cats should be brushed a few times a week, if not every day. This will keep their fur straight and detangled. If the fur is too long to manage, try cutting it or taking your cat to be groomed. Bathing the cat regularly is also a good idea to keep kitty with pretty fur.

Get a permanator hair brush for your cat, they sell it at wall mart. It removes tons and tons of hair from your cat, enough to make a pillow.

The best way is to groom your cat a lot. And cut it's it hair evrey 60 days same thing with mats

Well, the simplest way to prevent matting is by brushing your cat's fur every day or at least every other day. If the situation gets out of hand you can take your kitty to a professional groomer for help.
