Organic usually means that there has been no chemicals treated with maple syrup. Maple syrup has come from, obviously maple tree. If you look at your pancake syrup container, you may notice it has lots of high fructose corn syrup, which is overly processed and has too much sugar in high quantities.

Organic maple syrup is from the maple tree with no added flavorings or preservatives, and because it is organic, it does not contain some of the harsh chemicals that sappers sometimes use to make the syrup come out of the tree faster. Pancake syrup from the store is mostly corn syrup with added caramel coloring.

Maple syrup is the boiled-down sap from the maple tree. Producers often add a few drops of defoamer during the process, while organic producers add organic safflower or canola oil. Apart from this minor difference, organic and non-organic syrups differ in price but behave the same in recipes.

Basically organic is the new greatest thing that everybody wants when it comes to anything. It basically means that the product in question is produces using "organic", not man made product. This includes not using synthetic pesticides and fertilizer. If it's organic it will definitely say so on the bottle.

100% pure organic maple syrup comes directly from the tree. There are no additives like sugar or water. The consistency and thickness from the tree is exactly what can be expected. There are no atrificial fertilizers or additives given to the tree either.
