Chocolate is made from the products of the cacao bean with fats, sweetener, and other products added to it. Dark chocolate has a higher concentration of cacao and is typically compared to milk chocolate, which (obviously) is made with more milk. Look for a longer article about types of chocolate.

The difference between most chocolates is the percentage of cocoa. On one end of the spectrum is milk chocolate which contains a low percentage of cocoa and is very sweet. On the other end is dark chocolate which contains a high percentage of cocoa and can be very bitter. A good midpoint is semisweet chocolate, dark chocolate with low sugar.

Dark chocolate is chocolate without milk solids added. The lack of milk solids means that dark chocolate is more prone to drying out, being chalky and perhaps having a bit of a bitter taste. The milk solids in milk chocolate makes for a smoother taste and feel. Dark chocolate is made up of cacao beans, sugar, and an emulsifier.
