A tournedo is the tenderest, most delectable part of whatever creature that it has been cut from, formed into a circular portion if it does not "come that way", eg. salmon tournedos. Beef, lamb and pork tournedos are cut from the lower part of the tenderloin. Just enjoy!

A tournedo is an extremely tender, high quality, round cut piece of meat. The term originally meant a 5 or 6 ounce round end cut from a beef tenderloin.

Tournedo is a portion of meat. It is taken from the most tender part of the animal. It is prepared after forming into a round steak. The small end of the tenderloin is normally from where the cut is taken. It may weigh approximately 5 ounces.
