When you speed down the hill on a roller coaster, you get the sinking feeling because of gravity. Under normal circumstances, all the parts of your body are pushing on each other because of gravity. However, when speeding downhill your stomach becomes very light because there is less force pushing on it.

When one rides a roller coaster and comes to the top of a hill then goes down, the body experiences a very low g-force which means your organs--such as your stomach--are not being supported and are floating inside of you. This in combination of your flight or fight instinct causes that thrilling roller coaster sensation.
