It can be many different things such as an infection or eating something funny. It also could be a sign of something more serious such as cancer.

If it only lasts short periods of time I wouldn't worry about it. Glands can sometimes swell due to a sore throat and it will then return to normal.

The most likely cause is a throat infection and/or tonsillitis. It can also be a general infection that affects the entire body, but, in that case, other glands usually swell up too. The glands are swollen and painful while the organism fights the infection, and return to normal once it's healed.

Sometimes that can be caused my sinus infections, or the beginning stages of the flu. Drink plenty of liquids, and make sure you are well rested to heal the glands.
