A Delmonico steak is a rib eye, which is cut from a prime rib. The meat is trimmed from the bone and it tender, juicy and flavorful. Delmonico's was a popular NYC restaurant that made this particular cut of beef famous.

Del Monaco steaks are essentially rib-eye steaks that are boneless. They are very similar in appearance to filet mignon but have more marbling and are therefore more moist and tender.
