The symptoms are rather similar to humans, over weight parrots face a greater threat to liver disease. A long beak is actually a sign of poor nutrition and lead to breathing difficulties.

Diets of mostly seeds contain lots of fat. This can end up with fat in the liver and eventually kill the liver tissue. Overgrown beaks can indicate liver disease as can breathing difficulties, diarrhea, being overweight, losing weight rapidly, fluffiness, and seizures. Parrots in captivity do not need have the needs wild ones do and should have appropriate diet.
