I love gyros, but I don't know what spices give it that flavor.
The primary flavor is oregano, pungent Greek oregano if possible. That's combined with salt and pepper, dried garlic, and perhaps mint. A Pinch of thyme may go in too.
A good recipe for gyros meat: 1/2 lb ground lamb and 1/2 lb ground beef(Very lean), 1/2 c. very finely chopped onion, 2 tsp. fresh very finely chopped garlic, 3/4 tsp. sea salt, 1/2 tsp. marjoram, 1/2 tsp. rosemary, 1/4 tsp. black pepper.
I think it is the combination of spices used in greek meat seasoning that gives it good flavor. I taste garlic, cumin, oregano, cucumbers, onion , salt & pepper. I think some may also use wine or a yougart base.
Cinnamon and nutmeg are definately 2 ingredients used with the lamb and ground beef in a mousaka/gyro.
Greek Seasoning Mix has oregano, salt, onion powder, garlic powder, cornstarch, black pepper, parsley flakes, paprika, cinnamon, nutmeg, and thyme.
