What are some ideas for using large wine glasses for centerpieces?

You could have some type of liquid in the glasses with floating flowers or candles. You could also use colored sand with the colors of the room or appropriate to the occasion. Another thing you could add is flowers or vines to the base or surrounding the glass.

Large wine glasses look beautiful grouped with chunky candles of varying heights as well as wine bottles (perhaps with tapers that have been burned a bit) arranged among the candles. You could leave one glass upright, lay one glass on its side on a piece of lace add pearls and a vintage evening bag with one single rose for romance.
