German cooking blends many spices that are not usually popular in United States kitchens. One in particular is Juniper berries. These are used to season sauces like sauerbraten. Another popular spice is caraway. It is used in sauerkraut, cabbage and breads. Peppercorns, cardamom, bay leaves, fennel seed and whole cloves are some more popular German seasonings.

Yeah, unfortunately, a lot of caraway and dill is used. Another popular spice, especially in sausages, is marjoram.
