High-ratio shortening is vegetable shortening that has microemulsifiers suspended within it that allow the finished product to hold more sugar and liquids. The microemulsifiers are usually labelled as mono- and diglycerides. Monoglycerides are commonly referred to as trans fats, which are normal fats that have undergone a process to add extra fat molecules to the acid chain.

High-ratio shortening made specifically for making buttercream icing for cakes and cupcakes,make your white buttercream icing with less greasiness. Ingredients are Partially hydrogenated soybean and Palm oils with Mono-And Diglycerides added.

Usually partially hydrogenated vegetable oil (soyabean and palm oils), mono-diglycerides and Polysorbates. The oils are hydrogenated just enough to make a solid fat from a liquid oil. The minor ingredients (glycerides and polysorbates) promote emulsification to give a smooth mix with added moisture retention when you use the shortening in cakes and icing (gives a very smooth fondant).
