What are flash frozen meats?

Flash frozen meats are meats which have been frozen at such low temperatures (below 0 degrees celcius) the water inside them freezes. This helps ensure the food does not perish quickly by inhibiting most bacterium from growing in such conditions and slowing down chemical reactions. It is also a very quick process.

The term Flash Freezing refers to using temperatures well below the freezing point of water to freeze vegetables or meat very quickly in an industrial process. Usually the freezing process occurs too quickly for large ice crystals to form inside the cells the product as this would effect the taste.

Flash freezing happends directly after the meat is harvested. On a fishing ship large chunks of tuna and other fish will be frozen directly on the ship after the fish is cut up and packaged. This kind of meat is usualy very fresh and safe to eat. Alot of people prefer it.

Flash frozen meats are cuts of meat or fish that is frozen immediately after being cut. They are supposed to be healthier and fresher. The process is to wrap them in airtight cling wrap within minutes of being processed. Most flash frozen meat items are sold to resturants or thru mail order.
