Should I be concerned that my cat had one kitten then stopped the labor process?

My cat only had one kitten.

Take the cat to the vet to see if more kittens are in the uterus. If yes, they will have to be induced or removed surgically.

If you are certain that your cat was pregnant with more than one kitten, then you should go to the vet. It is common for cats to have only one in a litter if they are young, or if it's their first litter.

It is possible for a cat to stop labor in between kittens but you want to make sure that a kitten is not stuck in the birth canal.

No you shouldn't be. Although it's more common for cats to have several kittens it's quite possible for your cat to just have one. If you are at all concerned take your cat to the vet and have them do a checkup to make sure she is okay.
