Is there anything I should know about using charcoals in a barrel smoker?

I'm looking for both safety and flavor tips.

First thing is what type of charcoal to use. There are briquette, most common, and lump charcoal. Briquettes are cheaper and easier to find but burn faster and hotter, great for grilling. Lump charcoal will burn slower and cooler perfect for smoking or BBQ because you can maintain the heat and they provide their own unique flavor.

If you use charcoal lighter fluid let all the charcoal get covered with a grey ash so you don't get any fluid taste. Add more charcoals for longer cooking times. You can buy various kinds of wood chips that you soak in water and add for smoked flavor.

Hardwood charcoal should be used for smoking. It can easily be lit without lighter fluid in a chimney starter so the food a doesn't get a chemical taste.
