Scampi sauce is very easy to make. Most recipes call for just good olive oil, garlic, parsley, and white wine. You can really improvise and use as much or as little of these ingredients as you like. make sure to use enough oil but not make it too greasy.

Chop up some garlic very fine. About 4 cloves. Saute this in butter until it is soften and has released it's juices. Use about 1/2 stick of butter. Toss in some shrimp and cook about 5 minutes.

Clean and shell scampi. Boil. Make a paste of boiled scampi. In a pan, melt butter, add chopped garlic, boiled scampi puree and scampi stock. Season and use.
