How do you go about canning cole slaw?

I like to can but have never tried canning cole slaw.

It isn't possible to can cole slaw because of the fat content in the dressing used to make it. After time the fat will turn bad or separate during the canning process. However, the vegetables can be canned in a simple syrup and remain crisps for your next use.

Process coleslaw as you would a relish. Soak cabbage in salt water for 1 hour. Drain. Rinse. If too salty, rinse again. In a large pan, simmer cabbage, vinegar and spices for 20 minutes. Ladle into hot jars. Process in boiling water bath using 1/2 pint jars, for 15 minutes.

Canning coleslaw is like canning other foods, I have done it with success. I make sure the jar is pretty full, squeezing out excess liquid a bit, and should be canned in cold jars. All jars/lids must be clean/sterilized. They should be washed with hot, soapy water, and then boiled covered in water for about 15 minutes.

Boil the jars in water prior to using. Remove the jars from the boiling water, (there is a special clamp designed just for this) and put your slaw in the jars while they're still hot. Apply the rubber "o" ring, cap and outer ring. The "button" on the cap should pop up ensuring a tight seal.

Make a syrup with vinegar, water, sugar, celery seed, and mustard seed. Boil the syrup for one minute, then let cool, and mix with slaw(drained). Pack tightly in can.
