How do they decaffeinate coffee?

It makes sense that someone would be able to put caffeine into a product, but how is the caffeine taken out?

Caffeine is removed by soaking the beans in hot water, then passing the fluid through carbon filters. The water is returned to the beans to regain flavors and oils.
