Clean and cut roots into sections and lay out to dry. When the roots are dried they can be stored for future use or roasted immediately. They can be roasted on the stove top in a heavy skillet or in an oven. Once roasted, grind and brew just like coffee.

Actually, chicory isn't a coffee but a plant. It's been used as a coffee substitute and still in some coffee blends. The root is usually dried, then roasted and ground then used like you would regular coffee.

You basically have to take the chicory root and grind it down into a powder in order to filter for coffee. You could also add the grind into several coffee cake recipes to get a extra kick to your coffee cake. Chicory root when grounded offer a short period shelf life and must be used immediately.
