Fresh herbs are more pungent, so less is needed, compared to dry equivalent. Chop fresh herbs to release fragrance and flavour.

Fresh seasonings are usually green herbs, and add color and texture to food. Dried seasonings are the same herbs, plus spices, and are usually far more potent than fresh. Use 1 Tablespoon fresh herbs interchangeably with 1 teaspoon dried herbs.
