Does soy sauce go bad?

I have had some in my refrigerator for several years. Is it okay?

As long as it has been tightly capped in the refrigerator, it should last for up to one year. The high sodium content is what preserves the product. Soy sauces, such as Kikkoman's Low Sodium version only lasts for about six to eight months. Just to play it safe, I would discard any product over a year old.

Hmm... Well, given that Soy Sauce has about 430 mg sodium per teaspoon, I doubt that anything could grow in it. If you shake it, it will be fine.

It may not go bad in the sense that fruit or vegetables go bad, but several years is a long time to keep it. The taste may have changed, and it's probably best to be on the safe side and toss it.

Soy sauce does go bad - the water it in slowly evaporates and it gets thick and sludgy. It also smells stronger, so sniff it to tell if its bad.
