I think the seed has to have some kind of freezing process done first, but yes, you can plant a nectarine seed and get a tree.

Like peaches, fruit-producing nectarine trees are created from grafts, not grown from seed. Odds are, if you plant pits, you will spend years of time and effort and not have any fruit to show for it. You are much, much better off spending the few bucks to buy saplings.
